1. I worked at Gillett Stadium for 3 seasons cooking for 100k people a weekend. Loved it! 2. Owned and run my own catering oparetion, high end. Really liked it. 3. Over the years, got to train many many kitchen crews mostly dealing with how to tackle big catering. Opperations. Loved it. 4. Catering on large scale is what defines a great chef. To tackle an impossible task, to bring good cooks together so together we'll put this one in the books.. That takes greatness.

I love working banquets and catering!!! Weddings, retirement parties, cooperate parties, ECT. I have catered up to 450- 500 people in many different style events; buffets, plate- up, limited menu, carving stations, dessert bar, hor d'oeuvre, outdoor picnic styles, ECT. My favorite task to do with catering are the fruit and vegetable crudites!!! I like to follow the theme of the event ( hawaiian wedding) or incorporate the company's logo or type of business into the displays ( made a Dodge charger out of a honeydew for a tire company/ made a school bus out of a pineapple for a teacher's appreciation function)..
