Cons
No standards, organization, or support for their 3 restaurants. They were always understaffed & back dining rooms closed despite massive cover counts of 800 + on weekends. It’s a shame for such a successful brand as Eataly & their engaging dining concept. Servers were routinely assigned 10-12 table stations which is unsustainable even at a Waffle House level. Little to no support from the general manager who was too busy spending personal time with hostesses & departing each night with overfilled sacks of expensive wine. Managers stood at the pasta counter & chatted all night while service crashed around them. There would always be a guest line at the host stand that extended all the way back into the aisles. During the week the expectation was to seat 300-400 guests with just 2 hosts & 2 closed dining rooms which needlessly created false waits & upset guests, all of which was easily preventable with simply a minimum level of care & respect for company standards
