I applied in-person. The process took 3 days. I interviewed at The Cheesecake Factory (Palo Alto, CA) in Nov 2011
Interview
They have a 3 day interview process. The first is a 5 minute resume review by a manager to screen out qualified & unqualified applicants. Then, if they are interested in you, you will move on to the 2nd interview which includes a 1-1 skills/personality questionnaire of about 100 questions. If your responses/score follows Cheesecake Factory's skill requirements for the position, you will move on to a final interview with the general manager. This third interview consists of a 1-1 5-10 minute conversation where the GM decides if you would fit well in their work environment.

Interview
Nice and easy, the process was simple and smooth, they asked about previous experience, and that's really it. If you are looking to work somewhere with higher checks, go here.
I interviewed at The Cheesecake Factory (Washington, DC)
Interview
Pretty straightforward, they ask about your experience and how you would deal with certain customers. They ask about problem solving skills and customer service scenarios. They ask what you want from the job and where you see yourself in 5 years.
Simple interview process. Go in person and answer some basic questions with floor manager and they'll let you know if you got the job or not pretty much right there. Pretty sure everyone will get in.
