      Labor intensive "Hat switching"( different roles) Staying 1-2 hours later than planned Stuffy uniform Management can range from professional angelic to downright cruel & childish Favoritism Laziness/passiveness from all age groups especially younger staff Sub-par - no staff meal (byof) Call-outs (need 10 working with 6) Very tight & cramped cooking areas

      Excellent local catering organization designs very upscale food for large events

      Cons

      Definitely not enough work for contract labor and slow conversion process for direct hire. Mostly great younger supervisors & captains but a few longtime event directors not great w people

      Very bad culture - the teams are not supportive of each other and management just fires at a whim with no reasoning
