I applied online. The process took 3 months. I interviewed at Arup (Belfast, Northern Ireland) in Jan 2018
Interview
Fairly typical application form with a few questions on why you are applying for the company and the role, Job specific question to describe an interesting building and the challenges the engineers would have faced designing it. Almost 3 months till I heard I'd made it to the assessment centre, which was well run, featured a group task - assessing a potential project based on the company values, office tour, technical exercise - analysing the challenges of a project - fairly generic application of principles, and interview which was relaxed and about an hour during which your technical task was discussed and then some typical interview questions. Think there were 6 of us chasing one job, and then several others from other disciplines.

Question 1

Three parts: technical interview where a building schematic and questions were given, then talking through the answers to said questions, then generic interview questions about company / past experience, then case study interview where a brief were given to decide the feasibility of a project.
